Temperature Control

"Instruments and controls used for measuring, regulating, or recording temperatures, pH, aciditiy, water activity, or other conditions that control or prevent the growth of undesirable microorganisms in food shall be accurate and adequately maintained and adequate in number for their designated uses." CFR 21, Part 110.40

Recording thermometers are used to produce a record of temperatures at critical points in the process, during storage or even during shipment of finished products.
In line indicating thermometers confirm temperatures recorded on temperature control charts. These are mounted near recording devices to detect unacceptable deviations of product temperature from recorded values. They are also used to confirm temperatures of CIP solutions and tanks or silos holding liquid raw materials prior to processing.
Hand held thermometers are used to spot check temperatures of incoming raw materials and packaged products. They are also used to confirm temperatures when indicating thermometers are not available.
Reference thermometers are used to check all temperature measuring devices. The frequency of this verification is usually specified by regulatory guidelines.
