Buildings, fixtures, and other physical facilities of the plant shall be maintained in a sanitary condition and shall be kept in repair sufficient to prevent food from becoming adulterated
CFR 21, part 110.35
The condition of the plant environment outside the processing area greatly impacts the effectiveness of Good Manufacturing Practices put in place by the manufacturer. Over-all appearance of the building creates an expectation among employees and visitors of the importance the company places on cleanliness and organization. Employee break rooms, toilet facilities and changing areas, must be maintained in a way that will facilitate good personal hygiene.
- Wet cleaning of floors is difficult without the proper tools and cleaning agents.
- Dry cleaning of floors removes heavy soil and works well in areas where wet surfaces are not allowed.
- Stationary receptacles are the key components of a collection program.
- Tilt trucks facilitate collection in an efficient and sanitary way.
- Signs reinforce the importance of proper waste disposal.
- Cabinets store and organize supplies used for routine janitorial functions.
