In a wet processing environment aerosols may be produced when water strikes the floor. These droplets will carry micro-organisms — if present — throughout the production area. Personnel footwear is a primary vector for undesirable microorganisms from unsanitary locations.

Mats are used at entrances to remove soil, which can contain microorganisms. Certain specialty mats can also disinfect footwear surfaces.
Boot cleaners and sprayers remove soil from all surfaces of the boot. Use these when layers of material block sanitizer contact.
Sanitary Boots, are preferred for production personnel because they are designed to be easily cleaned and sanitized.
Shoe covers permit personnel in "street shoes" to enter production areas. They are also used when inspecting vats, tanks, silos and other sanitary equipment.
